Creamed Smoked Fish

INGREDIENTS:

900g Smoked Fish
450ml White Sauce
Toast Slices

METHOD:
Cover fish with cold water and stand for 1 hour. Drain. Parboil fish for 2 or 3 minutes, then poach gently in milk for 15 minutes. Drain. Separate fish in flakes and serve with white sauce. Serve on toast and garnish with paprika, parsley or had boiled egg slices.

Scalloped Macaroni and Fish

INGREDIENTS:

2 Cups Cooked Macaroni
2 Cups Flaked Cooked Fish
2 Cups White Sauce
1 Tablespoon Lemon Juice
1 Teaspoon Grated Lemon Rind
1 Cup Grated Cheese
Salt & Pepper

METHOD:
Combine macaroni, fish, sauce and lemon. Season to taste. Place in a greased oven dish. Top with cheese and bake in moderate oven until hot and brown. Serve with baked tomato halves.

Stuffed Baked Fish

INGREDIENTS:

Whole Fish (such as Schnapper)
2 Tablespoons Fat
Savoury Stuffing
1/2 Teaspoon Salt
1/4 Teaspoon Pepper
1 Teacup Hot Water

METHOD:
